It’s always a good day when Frieda’s Produce sends a box of goodies.
Sometimes it’s eats I’m familiar with, like those delicious Stokes purple sweet potatoes. But often I get new fruits and veggies that push me outside my comfort zone, in a good way.
This most recent package contained fresh ginger and Green Dragon apples, plus dried jackfruit. All new to my kitchen. All amazing.
I baked the sweet potato, slapped a ton of Nuttzo on that puppy and called it heaven.
But for the ginger and apples, I decided to go the savory and spicy route with a chicken stir-fry made up on the fly.
It turned out awesome enough that I felt a little sad when eating the last bite of the last dish of leftovers. Have you been there, too?!
This Paleo, gluten-free dish has a great blend of sweet, crunchy, and a little “bite” from the fresh ginger.
So yeah, I’ll be making this again soon!
But first, it’s time to share with you all!
Ginger Dragon Chicken Stir-Fry
Ingredients
- 4 chicken breasts, sliced into inch thick pieces
- 3 Green Dragon apples (or any green variety if you can’t find Dragons), quartered and then cut into matchsticks
- 2-3 leeks, sliced
- 1 onion, sliced
- 1 small knob fresh ginger, peeled and chopped (enough to make about 1 Tbsp worth)
- 3-4 stalks celery, sliced
- 4-5 Tablespoons coconut aminos
- 2 Tbsp. Coconut oil
- Sea salt and cayenne pepper to taste
Directions
1. In a wok or large skillet, heat on high the coconut oil, adding in chicken and ginger once it gets hot enough. Turn chicken occasionally, cooking 2 minutes or so.
2. Add in leeks, onion, apples and celery and the aminos, salt and pepper. Stir fry another 5 minutes or until apples and veggies are cooked but still slightly crisp.
3. Serve solo or over cauliflower ‘rice’ or with another veggie.
